Baked Lemon Lime Tart
Ingredients
- 4 eggs
- 170 g caster sugar
- 125 ml cream
- 80 ml lemon juice
- 80 ml lime juice
- Finely grated rind of 2 lemons
- Finely grated rind of 1 lime
- Baked Sweet Shortcrust Pastry Shell
Method
- Preheat oven to 160oC.
- Place the eggs and sugar in a bowl and whisk to combine.
- Place the rind of lemon and lime in the juices.
- Add the cream then the lemon and lime juices and whisk lightly
until just combined.
- Pour the mixture into a cooled pastry shell and bake for 25 to
30 minutes, or until just set.
- Remove from the oven and leave to cool
