Baked Lemon Lime Tart

Ingredients

Method

  1. Preheat oven to 160oC.
  2. Place the eggs and sugar in a bowl and whisk to combine.
  3. Place the rind of lemon and lime in the juices.
  4. Add the cream then the lemon and lime juices and whisk lightly until just combined.
  5. Pour the mixture into a cooled pastry shell and bake for 25 to 30 minutes, or until just set.
  6. Remove from the oven and leave to cool
