Meat and Potato Casserole

Method

  1. Peel potatoes and boil.
  2. Heat oil in pan, add chopped onion, crushed garlic and steak.
  3. Cook until dark golden brown mashing meat well.
  4. Drain off surplus fat from meat
  5. Mash potatoes and cool slightly.
  6. Add sour cream, drained corn, chopped shallots, salt, pepper and lightly beaten eggs. Mix well.
  7. Spread half this mixture over base of oven proof dish, sprinkle with half the grated cheese.
  8. Spoon meat mixture evenly over potato layer.
  9. Spread rest of potato over meat and sprinkle remaining cheese.
  10. Bake in a moderate oven for 30 minutes or until golden brown.
