Meat and Potato Casserole
Ingredients - Potato Mixture
- 1 kg potatoes
- 1/2 cup sour cream
- 300 g can of corn niblets
- 4 shallots
- salt and pepper
- 2 eggs
- 2 oz cheese
Ingredients - Meat Mixture
- 1 tbs oil
- 1 onion
- 1 clove garlic
- 450 g mince steak
- 1/2 tsp oregano
- 15 oz can of whole tomatoes
- 1/4 cup of tomato sauce
Method
- Peel potatoes and boil.
- Heat oil in pan, add chopped onion, crushed garlic and steak.
- Cook until dark golden brown mashing meat well.
- Drain off surplus fat from meat
- Mash potatoes and cool slightly.
- Add sour cream, drained corn, chopped shallots, salt, pepper and
lightly beaten eggs. Mix well.
- Spread half this mixture over base of oven proof dish, sprinkle
with half the grated cheese.
- Spoon meat mixture evenly over potato layer.
- Spread rest of potato over meat and sprinkle remaining cheese.
- Bake in a moderate oven for 30 minutes or until golden brown.
