Minestrone Soup
Ingredients
- 2 tbs oil
- 1 onion, finely chopped
- 4 cloves of garlic, crushed
- 2 carrots, finely chopped
- 2 stalks of celery, chopped
- 3 rashers of bacon, chopped
- 6 cups of rich beef stock
- 1 potato, diced
- 1/4 cabbage, finely shredded
- 3 zucchini, diced
- 1 cup macaroni
- 2 tbs parsley
- 1 tbs sage
- 1 tgs oregano
- salt and pepper to taste
- 1/2 cup grated parmesan cheese for serving
Method
- Heat oil, add onions, garlic, carrot, celery and bacon; cook until
soft.
- Add stock, potato, cabbage (finely shredded), zucchini (diced)
and tomato puree.
- Cover and simmer for 1 hour
- Add macaroni, parsley, sage, oregano, salt and pepper.
- Cook for 30 minutes.
- Plate up, garnish with Parmesan cheese.
