Minestrone Soup

Ingredients

Method

  1. Heat oil, add onions, garlic, carrot, celery and bacon; cook until soft.
  2. Add stock, potato, cabbage (finely shredded), zucchini (diced) and tomato puree.
  3. Cover and simmer for 1 hour
  4. Add macaroni, parsley, sage, oregano, salt and pepper.
  5. Cook for 30 minutes.
  6. Plate up, garnish with Parmesan cheese.
