Pumpkin Soup
Ingredients
- 1 - 1/2 lbs pumpkin
- 60 g butter
- 2-1/2 cups of chicken stock
- 500 g butter
- 2-1/2 cups of milk
- 1 onion
- salt, pepper and nutmeg to season
Method
- Melt butter in pan.
- Add chopped onion, small cubes of pumpkin and cook for 5 minutes.
- Add chicken stock and simmer for 20 minutes or until
pumpkin is soft.
- Puree in blender and return to clean pan.
- Add milk and season.
