Sizzling Steak
Ingredients
- 500 g fillet steak
- 1/4 cup water
- 1/4 tsp bicarbonate of soda
- 3 onions
- 4 tbs oil
- 1/4 cup Worchestershire sauce
- 1/2 cup tomato sauce
- 1/2 cup sugar
- 1 tbs white wine
Method
- Slice meat thinly, flatten each piece with a meat mallet, put into
bowl.
- Peel onions, cut into wedges.
- Combine water and bicarbonate of soda, pour over steak, leave to
stand 1 hour, drain well. This help to tenderise the meat.
- Heat one tbs of oil in pan or wok, add steak, toss one or two
minutes over very high heat to evaporate water, drain.
- Pour off oil from pan.
- Heat two tbs oil in pan, return steak to pan, cook until well
browned over high heat, remove from pan.
- Put cast iron steak tray in very hot oven for about 10 minutes or
until plate is very hot.
- Heat remaining tbs of oil in pan, aad onions, saute until golden
brown and still crisp. Remove from pan, keep warm.
- Return steak to pan, toss for one minute.
- Add combined Worchestershire sauce, sugar and tomato sauce.
- Stir until sauce boils, reduce heat, simmer for two minutes.
- Remove steak plate from oven using handle, and place on wooden.
- Arrange onions on steak plate, spoon meat and sauce over onions.
- Pour wine over steak plate immediately to give the characteristic
"sizzle".
