Sizzling Steak

Ingredients

Method

  1. Slice meat thinly, flatten each piece with a meat mallet, put into bowl.
  2. Peel onions, cut into wedges.
  3. Combine water and bicarbonate of soda, pour over steak, leave to stand 1 hour, drain well. This help to tenderise the meat.
  4. Heat one tbs of oil in pan or wok, add steak, toss one or two minutes over very high heat to evaporate water, drain.
  5. Pour off oil from pan.
  6. Heat two tbs oil in pan, return steak to pan, cook until well browned over high heat, remove from pan.
  7. Put cast iron steak tray in very hot oven for about 10 minutes or until plate is very hot.
  8. Heat remaining tbs of oil in pan, aad onions, saute until golden brown and still crisp. Remove from pan, keep warm.
  9. Return steak to pan, toss for one minute.
  10. Add combined Worchestershire sauce, sugar and tomato sauce.
  11. Stir until sauce boils, reduce heat, simmer for two minutes.
  12. Remove steak plate from oven using handle, and place on wooden.
  13. Arrange onions on steak plate, spoon meat and sauce over onions.
  14. Pour wine over steak plate immediately to give the characteristic "sizzle".
